As the snow starts to fall hard on NYC and impeach As the snow starts to fall hard on NYC and impeachment vote is going on and ugly, we can’t help remembering where we were two weeks ago... drinking some delicious maceration of Sauvignon Blanc by GraWu watching a beautiful sunset on the Sian Ka’an jungle... wishing the best for the future, without tariffs, without jerks in office, without walls between here and there!

If you are visiting The Yucatan region of Mexico, and more precisely Quintana Roo and Tulum, you should go to Kaan. One of these few places we hesitate a lot before sharing, scared to loose them....⁣

Tulum is surely not a place where you go for the wine (we went for the beach, and took wine with us...). But at Kaan, we had natural wine (even if super small selection, we really enjoyed that bottle from Bichi). We also had great cocktails. And more than that, we had an amazing experience that is all about the strong emotions and ideas that we find in artisan food and wine. ⁣

Chef Hugo Duran has created a place here that celebrates nature and local terroirs in a beautiful way. ⁣
⁣
Kaan is just a few miles south from the busy and somehow sad Tulum beach’strip that has now sold its soul to consumerism, money and many other vices. But when you get to Kaan, you forget all of that dark side. ⁣
⁣
It is deep enough into the Sian Ka’an biosphere natural reserve, a natural protected environment where you feel totally remote; on a small strip of land and jungle between the ocean and the lagoon. The beach is absolutely wild and beautiful. The restaurant is setup as a camp ground and many of the staff are living there for the season, in tents.⁣
⁣
Most importantly, Hugo Duran and his staff are cooking wonders. This food is solar, energetic, real, digging deep in the roots of the many cultures that have been around the area. And the service is just as good and real.⁣

We took Ambra to the tropics! Ambra is one of the We took Ambra to the tropics! Ambra is one of the recent wines from GraWü. We were very excited to taste It when we visited Dominic and Leila, as we first tasted last spring from the tank and we were very intrigued and excited to wait for 2018 to be bottled and released.⁣
⁣
Ambra is a white macerated wine (like all GraWü’s wines 🤪) from the Souvignier Gris grape variety. It carries GraWu’s touch, no doubt, and the filiation with Bianco is clear, yet the wine is very different, easier and lighter. Explosive yet elegant and subtle aromatics. Taste beautiful and easy to drink, with a nice acidity and a citrus flavor that gives a nice backbone all along. Ambra is not scared to pair with acidic or even slightly spicy food (like we had it with...). ⁣
⁣
Beyond how good it is (yet the most important!), it’s interesting to know that Souvignier Gris is a fungus resistant grape (a PiWi) resulting from the crossing of Cabernet Sauvignon and Bronner, a german hybrid. No treatment are needed, which makes it very friendly to the environment (and the growers 😉, especially looking at the slope in GraWü’s vineyard). ⁣
⁣
Leila and Dominic planted it in their vineyard early on and followed with other fungus-resistant varieties thinking this is a clear path to keep producing natural wine when climate changes is making it more and more challenging for traditional grapes. Does it really matter if it is not 100% vitis vinifera? Should we even speak about that? My palate in any case doesn’t mind and would not have tell.⁣
⁣
Ambra is a long maceration (7 months), then aging 6 more months in large acacia tanks. It is of course unfiltered and unfined, like all GraWü wines and has minimal sulfite added (lab says in the end 12mg per liter in the wine).⁣

Still recovering from ten very rainy days on and a Still recovering from ten very rainy days on and around the italian and french alps meeting with plenty of amazing winemakers. One of the many highlights of the trip was spending some quality time with Julien Viana, from Cellier de la Baraterie in the Combe de Savoie.⁣
⁣
Julien is one more example of how youth is shaking our wine landscape for its best. Julien cultivates 10 hectares in Savoie, 5 being dedicated to his wines. His farming is totally organic, eyeing towards biodynamic practices. He is also not only doing grapes but cultivating other vegetables and caring for bio-diversity (the sheeps on one of the pictures are his, about to do hard work in the vineyard...). His practice in the cellar is also extremely natural, it is all about fruit. Natural fermentation, no additives beyond a tiny bit of sulfites. This is purely wine 100% from fruit, nothing else. A very humble and down-to-earth attitude producing delightful fruit-forward wines from the traditional Savoie grapes and soon beyond!⁣

Great evening exploring another side of Piedmont’s wine world. Marco and Tomaso from Forti del Vento are making very interesting wines in the Ovada region. Some beautiful Dolcettos, but also some Nibiö, Cortese, Barbera and more. They are definitely going full throttle on the natural path: zero-zero. Their wines are classic, they need time. With it, they build great balance and are much more than what one can sometime expect from a zero-zero natural wine. Soon leaving for italy, last 3 days were a lot of Soon leaving for italy, last 3 days were a lot of fun, a lot of work too, met rockstars winemakers in the french alps and north rhone, passionate people at every place we stop, went trough Dauphiné where electricity got shut down and will come back not before two more days, where snow destroyed orchards - so sorry for the farmers, tasted a lot of grape varieties, the region has more grapes than anybody could imagine... and now heading to north italy. Thank you Savoie, Isère, Drôme and Ardèche!
