Cantina Giara is located in a magical corner of Puglia not far from Adelfia, in the province of Bari, ripe with meadows, wild orchards, old vineyards and wild woods. Giorgio Nicassio’s family has been making wine on this beautiful land since his grandfather started the tradition in the late 80’s. This tradition is now kept alive and flourishing by Giorgio, who has dedicated his passion to making living, vibrant natural wines that are an uncompromising expression on terroir and of his vision. Giorgio’s unflinching and loving focus is on tending to traditional local varieties and guiding them towards becoming unforgettable wines: these include Primitivo, Verdeca, Malvasia, Greco, Fiano and Moscatello Selvatico. The work in the vineyard follows strict biodynamic guidelines, with the aim of favoring health and biodiversity of the soils and the environment. The vineyards grow on clay-calcareous soils and range from 35 to 65 years of age, many trained with the traditional and almost extinct “Tendone Vecchio Impianto” method. Giorgio’s “natural wine” philosophy aims at sublimating the most unadulterated and pure expression of fruit and terroir. This translates in the cellar in only wild fermentations, no temperature control and nothing added or taken away, therefore no winemaking additives, fining nor filtration. The soul and strength of the skins, for both reds and especially whites, is a vital element in unleashing a wine’s potential in Giorgio’s opinion, so maceration is a key element of his work. Giorgio likes to define himself as a humble craftsman of wine, with each of his wines, bottle by bottle and vintage by vintage, displaying a different character just like a living being would. From the 2020 vintage, all of the wines have no added SO2.

Back in time there were two villages, Montrone and Canneto and they were rivals. Later, they were joined and turned into a single town called Adelfia, from the Greek adelphos, which means “brotherhood”. Mons-Roni Cannitum was born with this ancient feud in mind, and with the idea of creating a wine that would unite the two towns in an ideal hug. The wine is obtained from 70% Verdeca, 20% Malvasia and 10% Moscatello Selvatico grapes. The vineyards are cultivated over calcareous-clay soils and with the use of biodynamic practices. Harvest is done by hand with the use of small wooden crates. Fermentation is spontaneous, without addition of any kind of yeast. Wine is unfiltered unfined, and aged in steel after a long maceration on the skins.

“Cicaleccio”, the name of this skin-contact wine comes from the sound of Puglia’s cicadas (Cicale in Italian), which accompany the hot summer days. Fiano di Puglia and Falanghina are farmed biodynamically, and harvested in small wooden crates. Native yeast, no added sulphites, unfiltered and unfined, this wine is the result of Giorgio’s philosophy who believes spontaneous fermentation is the best way to obtain the right complexity of aromas in his wines.

Sometimes the best results are obtained by shear chance. Unpredictable events may cause situations that can lead to unexpected results. Fatalita’ was born as a one-time experiment and the result was so good that it has since then become one of Cantina Giara’s most loved wines. This is a wine produced on clayey soils cultivated with natural methods; no synthetic chemical products were used in the vineyard In the cellar no yeasts of any kind have been added, only spontaneous fermentation. Fatalità unfiltered and not clarified. The amber color, the intense and complex aroma, the original and well-structured taste: these characteristics make the wine delicate, with a flavor of aromatic herbs with musky and floral notes.

From the name of the owner’s daughter, Rose Mary, Rosmé is a rosé wine obtained from spontaneous fermentation with its indigenous yeasts and a brief contact of the “Mosto Fiore” with the skins of Primitivo di Gioia del Colle grapes. Decanted three times before being bottled, this wine is not filtered and not clarified. Rosmé presents itself in the mouth with a pleasant elegant taste, a dry and pleasantly fresh flavor; to the velvety and fruity nose, it reserves an enveloping and delicate aromatic complexity.

From a selection of “Primitivo di Gioia del Colle” grapes comes the primitivo Primordio obtained with the sun, the earth and Giorgio’s passion, in strict respect for the environment. The vines, located on limestone / clay soils, are over sixty years old. This wine is not filtered, it is not clarified, it is not barricaded and is decanted twice, before being bottled. The harvest is carried out by hand in small crates and in the cellar it ferments spontaneously with its own yeasts (indigenous yeasts). Well structured, with soft tannins, intense ruby red color tending to purple, quite pronounced varietal aromas: all elements that make Primordio a full, warm wine, with a fruity aftertaste and a delicate hint of spices.
